Leftover Roast Chicken and Cabbage Stuff

We are always looking for new uses for our leftover roast chicken, we order our Organic Chickens from Aussie Farmers Direct and they only have one size, which does us 2 meals. It also provides a chicken carcass but that’s another story…

Quite often the leftover roast chicken ends up in our unique “stuff” dishes.

Today we also had a bunch of random vegetables so I started without really knowing where this was going…

Roast Chicken and Cabbage Stuff – using leftovers to make a quick and unique dish

So I threw in:

  • half an onion
  • some Chinese cabbage
  • capsicum
  • mushroom, and
  • garlic

I fried it all up and then add;

  • Tomato, and
  • Tomato pesto

I mixed it around and hunted around until I found some cooked pasta! Win! so I add

  • Cooked pasta

I stirred this in and let it warm through and add the

  • Roast Chicken,
  • Salt and Pepper

Let it heat through, turn off the heat and then add

  • Parmesen
  • Praprika

Let it sit for a few minutes and serve.

So Stuff is not the most photogenic of foods, but usually has these three things of awesomeness!

  1. It uses up the things in the fridge/freezer/pantry
  2. It’s usually quite quick
  3. It always seems to taste great and different!

The cabbage was quite crunchy and really add a great texture to the dish.

NB. I recommend only making enough for tonight meal, leftovers should not be turned into leftovers.
