It’s inevitable, she’s all grown up and going to big school!
We have worked out way into a rut lately, so much has been going on in our lives, that things that are important to us like eating real home made food has dropped in priority. We were at the point of buying all our breakfast and lunches from cafes and even our dinners were in a rut. But now, we are enrolled in big school! and at about the same time we realised how much money we were spending on buying ready made food that we started packing lunches. Now, we’ve never been very good at this, at best we’ve been known to taking in some leftovers, or buying corncakes and avocado one week…
But now we have a big girl, who is going to need packed lunches. And so we will need to get into the practice of packing lunch and eating breakfast at home!!
And so here goes:
- 1 zucchini Grated
- 1 carrot Grated
- 1 can Corn drained
- 1-2 cloves garlic crushed
- 2 medium eggs
- 1/2 cup Flour variable
- dash Milk any variety of milk
- Salt and Pepper to taste
- 1 handful Parmesan cheese optional
- Grate and drain your veges, add eggs and garlic, stir

- Add milk, flour, salt and pepper. Stir and let rest for a few minutes.

- Fry or bake on baking paper. Use a medium heat so the ingredients can cook through, take your time.

- Let cook before packing for lunch so they don't sweat.

I know there are lots of recipes out there for fritters. Have fun with the ingredients, add herbs, spice and love.
