Have you tried Soupa Paraguaya?

Kindly gifted to me by a client, Soupa Paraguaya is a delicious loaf recipe. It is a great accompaniment to a variety of meals. Try serving alongside some chilli beans or with a summer BBQ.

Ingredients

  • 1 tablespoon margarine or butter
  • 3 eggs
  • 1 can creamed corn
  • 1 cup polenta
  • 2 teaspoons baking powder
  • Pinch salt
  • 1 cup low fat milk
  • ½ cup mozzarella, grated
  • 1 small red onion, chopped

Method

Combine margarine, eggs, creamed corn, polenta, baking powder, salt and milk in a blender. The mixture should be the consistency of thick cream (add more milk if required).

Stir in cheese and onion and pour into greased baking dish (square or large loaf pan – if the pan is too small the mixture will not set in the middle).

Bake in preheated oven at 180°C for 45-60 minutes until set (will bounce back when touched in the centre). Transfer to a serving dish and enjoy warm or at room temperature.
